I'm curious why you aren't considering Spain. They, at least, don't have issues with English speaking people. The French do, or used to. I haven't been in France since 2015.

I've decided that I'm going to an English speaking country. Not sure what Irish demands are, but as I hold German nationality, I can move around freely. Irish has the least stringent. I can live there for 6 months without registering.

It is, however, incredible expensive - 2% more than the States.

Malta might be an option for you.
